The wine program at Grossi Restaurants is headed by Mark Protheroe, a wine professional who has amassed years of tasting memory and purchasing experience.

Beginning in a front-of house management position before the age of 20, Mark then headed to vineyards across North East Victoria for insight into the region’s winemaking. Here his passion for the craft was ignited.

After working as a sommelier at Sails Restaurant Noosa until 2003, Mark travelled throughout Europe’s famed wine regions – predominantly within Italy and France while working in restaurants within the United Kingdom.

His time at the 3-michelin starred Restaurant Gordon Ramsay under Master Sommelier Ronan Sayburn put him in great stead for his role as wine department manager at Valvona & Crolla in Endiburgh, Scotland in 2004. Here he managed a selection of over 500 Italian wines. During his tenure, Valvona&Crolla reclaimed the coveted “Italian Wine Merchant of the Year from the UK” award while also maintaining the title of “Scottish Wine Merchant of the Year” from Wine Magazine.

In 2006 Mark joined the modest WoodWinters wines & whiskies team in Bridge of Allan, Scotland as store manager. Along with the two owners, he established the fine wine store and in their first year were awarded Scottish Wine Merchant of the Year from Wine Magazine – a title Mark was awarded in the previous year.

Mark continues to hone his skills as Group Head Sommelier for Grossi Restaurants. In 2011 he will be flying overseas to attempt the Advanced Sommeliers exam – an exclusive test for those who have achieved a top ten finish with the Court of Sommelier Masters’ sommelier certification.

Delving into their extensive knowledge and fuelled by Guy’s passion for all things vinous, they bring to our lists a wide range of wine styles from all over the world with a focus on quality like minded producers, that employ sound agricultural technique. On our list you might find difficult to acquire well known bottles, or exciting lesser know wines to explore, each bottle revealing its personality and telling a story about the soil, the winemaker and the vintage.

Our wine lists are ever changing and dynamic which enables us to deliver depth, not only in style but also regional representation. Throughout the lists you will find explanatory notes. These are a by-product of our passion for product knowledge and can be helpful with food matching. Food and wine are intertwined and our extensive list gives our sommeliers the opportunity to open the individual bottles to suit
